The black Kampot is, as its name suggests, harvested in Kampot in Cambodia. By hand, the grains are harvested from the bushes when they take on a slightly yellowish tint. They are then dried in the sun and cleaned. The black Kampot is ideal for dishes with red meats or sauces.
