Arche Naturküche Apple Pectin, 20 g

Apple pectin is a vegan gelling agent made from the pomace left over after apple juice production. It gels very quickly and stays elastic. It is high in fibre and low in calories. Using apple pectin as a gelling agent lets you choose the amount of sugar to add to your fruit spreads, jams or jellies. That's why you can use pectin to prepare sugar-free or low-sugar spreads.

Note: Pectin is not yet available in organic quality. However, this apple pectin by Arche is a so-called "non-amidated pectin" and is therefore approved for the production of organic products.

Preparation for fruit spreads with apple pectin:

• 1.3 kg fruit (chopped, peeled and cored as necessary)
• 1 pack of Arche Apple Pectin
• 700 g sweetener of your choice (or less)
• The juice of half a lemon

1. Mix the package contents with the sweetener. We recommend about 700 g of sugar or sugar alternative, but you can adjust the amount to suit your taste.
2. Mix the chopped fruit with the lemon juice.
3. Place the fruit and the pectin-sweetener mixture in a large pot and bring to a boil while stirring.
4. Simmer for about 3 to 5 minutes. Stir constantly.
5. Pour into prepared sterile glass jars while still hot and seal.

Tip: For the production of fruit jelly, please use 0.75 - 1 litre of fruit juice instead of chopped fruit. Use 500 g sugar to sweeten. The remainder of the process is as above.
