Arche Naturküche Organic Fruit Gel, 22 g

This organic gelling agent is perfect for whipping up delicious fruit spreads, jams, marmalades and even red fruit jelly.

The plant-based gelling agent is a perfect composition of starch, arrowroot, agar-agar and pectin. It contains no added sugar and is neutral in taste. Add the amount and type of sweetener of your choice depending on whether you're processing naturally sweet or tart fruit.

Please note: the amount of sweetener used and the cooking time will affect the intensity of the fruit flavour and the shelf life of the finished product.

Preparation:

• 1 kg fruit (peeled, cored and chopped, depending on the variety)
• 22 g Arche Fruit Gel (corresponds to approx. 2 heaped tablespoons)
• 300 g sweetener of your choice (or more to taste)
• 3 tbsp lemon juice
• Sterilised jars and lids

1. Place all ingredients in a large saucepan and stir.
2. Bring to the boil.
3. Reduce heat and simmer for 5-10 minutes. Stir constantly.
4. Do a gel test: place a small amount of your jam or fruit spread on a cold plate. If it develops the desired firm consistency within a minute or two, your jam or fruit spread is ready. You can transfer it into sterile jars. Otherwise, let it simmer for another minute and repeat the gel test.
5. Close jars tightly and turn upside down. Keep the jars upside down until completely cool.
