These wafer-thin rice paper sheets are incredibly versatile which is why they are so widely used, especially in Vietnamese cuisine. Rice paper is neutral in taste and lends itself perfectly to making delicious finger foods. You can make spring rolls, raw summer rolls or add a sweet fruity filling. All you need to do is make the filling and you can get started.

Preparation:

1. Fill a deep plate with lukewarm water.
2. Take one sheet of rice paper at a time and place it in the water.
3. Let it soak for about 30 seconds, take it out and place it on your work surface.
4. Place about 2 tablespoons of a filling of your choice in the middle. Leave the edges free and tuck them in on all sides.
5. Roll up tightly and fry, roast or bake in the oven or serve raw, depending on the filling.
