Harissa
African chili paste
Harissa chili paste comes from North Africa and is hellishly hot. It is produced from dried or fresh chillies. The paste is then seasoned with garlic, salt, cumin, coriander and mint. To make the paste a little milder, tomatoes are added. In Arab cuisine, Harissa is traditionally used for soups, stews, rice, and for marinating lamb and chicken before grilling. In North Africa, the spicy paste is served with couscous.
