Description

Arche's tapioca starch, made from organic manioc root tubers, is perfect for thickening soups and sauces. Tapioca starch not only thickens but also adds a subtle sheen to foods that is mainly seen in Asian cuisine.

Tapioca starch is also an excellent alternative to corn or potato starch in pastries and desserts.

Dosage and preparation (for thickening and binding): Use 2 to 3 teaspoons (ca. 10 g) of tapioca for 500 ml of liquid. First, mix it with some cold liquid until smooth. Then stir the smooth, lump-free mixture into the boiling soup or sauce and bring to the boil briefly.

Tip: You can also use tapioca starch to make pearls for homemade bubble tea. For this you need the following ingredients:

  • 40ml water
  • 30 grams brown sugar
  • 80 g Arche Organic Tapioca Starch
  1. Heat water and sugar in a pan.
  2. Once the sugar has dissolved, remove from the heat and stir in about half the tapioca starch.
  3. Gradually stir in the remaining starch into the sticky, doughy mass. It should form a firm lump.
  4. Place lumps on work surface and knead into a smooth dough. Warning: let it cool first to prevent burns!
  5. Divide the dough into four portions. Roll each ball into long thin strands.
  6. Cut off small pieces (about the size of a pea) and shape them into little beads. You can also roll the pearls in some dry tapioca starch so they don't stick together while cooking.
  7. Meanwhile, bring a large pot of water to the boil.
  8. Add the tapioca pearls to the boiling water and simmer over medium-high heat for 20 minutes. Stir regularly.
  9. Turn off the heat, cover the pot and let the pearls continue to steep for about 20 minutes.
  10. The tapioca pearls are ready when they have the consistency of jelly.
  11. Fill into a glass with ice cubes and top up with your favourite cold tea. Add juices, syrup or milk as desired.
